Appam without Yeast - trials and errors

Trial 1

  • 1 cup Idli rice
  • Half cup   coconut pieces.
  • 1   tablespoon whole urad dal
  • Quarter teaspoon fenugreek

Soak for whole day and grind at night into smooth paste with 2 tablespoons  cooked rice and coconut water. Before making appam I added water and then added sugar and salt.

Result.

The batter fermented the next day but the appam was very soft. Too soft that it stuck on to my appam chutty.

Trial 2

  • 1 cup Idli rice
  • Half cup   coconut pieces.
  • 1   tablespoon whole urad dal
  • Quarter teaspoon fenugreek

Soak for whole day and grind at night into smooth paste and coconut milk. Before making appam I added coconut milk once again instead of water and then added sugar and salt.

Result.

Again the batter fermented the next day but the appam was very soft. Too soft that it stuck on to my appam chutty.
